Mezcal Fig Sour Cocktail Recipe
Yield: About 12 servings
2 oz Lobos 1707 Mezcal
1 oz fresh lemon juice
1/2 oz simple syrup
2-3 ripe figs, muddled (plus extra for garnish)
Lemon wheel or twist, for garnish
Cut 2-3 ripe figs into small pieces. Place them in a cocktail shaker or mixing glass.
Use a muddler or the back of a spoon to gently muddle the fig pieces in the shaker. This will release their juices and flavor.
Pour 2 ounces of Mezcal into the shaker with the muddled figs.
Squeeze 1 ounce of fresh lemon juice and add it to the shaker.
Pour in 1/2 ounce of simple syrup (adjust to your preferred level of sweetness).
Fill the shaker with ice and shake vigorously for about 15-20 seconds to chill and thoroughly mix the ingredients.
Strain the cocktail mixture into a rocks glass filled with ice. You can also double strain if you want to remove any fig pulp or seeds.
